PS3 Games with Bounty Hunting or Assasinating?

I want a game that focuses on bounty hunting or silent assassinations, I have Red Dead Redemption. I like killing with knives while remaing stealthy or sniping or full out assaulting for pay.|||Metal Gear Solid (if you're ok with a ridiculous amount of cutscnes), Assassins Creed,|||The Hitman series and the Tom Clancy games come to mind
